I love food…I do, love eating it and love finding recipes and trying new foods, no big surprise really since that’s what I’ve studied for 4 years in college. I’ve discovered some foods and recipes lately that I have enjoyed and will be trying and I’m going to share them with you!
Joseph’s Flax, Oat Bran & Whole Wheat Pitas:
60 cal, 4 g fiber, 2 g fat (omega 3 fat, which is the good kind)…
generally a superior sandwich choice!
I didn’t know how these would be, but they’re great! I can change up the monotony of my usual turkey sandwich. I pack mine with: turkey, chipotle cheddar cheese, fresh spinach, green bell pepper, and a little light zesty Italian Kraft dressing. mmmm…
Use these pitas for the usual sandwich substitute or something different like a individual pizza crust, quesadillas, and I think I’ll use them when I try the turkey burger recipe I found.
I’m also going to share this fantastic black bean salsa recipe that I dug up from Food Prep lab.
15 oz. can black beans, drained
15 oz. can corn, drained
4 oz. can green chilies
1/4 c chopped purple onion
1/4 c chopped red bell pepper
1/2 c chopped cilantro
1 clove fresh garlic minced
1/3 c olive oil
1/3 c fresh lime juice
1/4 c roasted chipotle Tabasco
1/8 tsp black pepper
1/4 tsp salt
Mix everything together in a large bowl, chill, and serve alone as a cold salad or with chips as a salsa!
