I started this post the morning I was moving out and am just now posting it, so keep that in mind…

Well, the time is upon me…today is the day I move out of Stillwater…forever? When I got to this town I cried and I’m sure the same will happen when I am pulling out of town. These two experiences have completely different feelings attached to them. I would have never made it through college without my dearest friends and we have created the greatest memories together that I will never forget! Here are a few shout outs and memories:

I met Madison my first week of college and clung on to this girl like I had never had another friend before…and would have never made it without her, really, I wouldn’t have come back to Stillwater! People thought we were literal twins and I wouldn’t have liked sharing that with anyone else. You’ll be a wonderful teacher and you’re kiddos will know all the Hollywood gossip I’m sure.

Then came Nikki…and “it was so good, guys, so good” she was a peppy, happy, happy girl and I was afraid. Even though I know they are mass texts and you will change 12 times before we leave, I’ll keep responding. I love her optimism and am so glad we are sticking together in Houston.

Amanda D was next, she and I are twins (well, triplets really, but…) we lived together for nearly 3 years and only had one fight over the “Dreamer” guy (you know who). We have had the greatest conversations and some really deep chats along with quite a bit of sarcasm that we try to control.

Kristen, I’m sorry I can’t get ready any faster and I hold back your nights haha. I’ve loved living with you and our lovely nights of Biggest Loser, while eating the best homemade Oreos ever.

Caitlin thank you for saving my life from Pledgie…and yes, he was a hairy little _____. I loved experiencing the Weed and my only Calf Fry with you.

Amanda H, I’m so glad we made it through this year’s classes and are moving on to internships! I also will throughly miss our times out together, you are hilarious. I’ll leave it at that d/t this being public.

Hayley, Hayley, Hayley…I have loved experiencing the strangest semester of my life in the SNACK/SHACK with you. I will not miss the worst smell and dirtiest kitchen ever. Our Stonewall love and many Wednesdays out has been wonderful, hubby!

Sydney you are an inspiration for me to get a hobby and read more. You’re energy is amazing (as long as we stay on the snack schedule). Thank you for opening your house for case study nights and introducing me to great new games.

Now, for the other portion of this post! Hayley and I went on a lovely bike ride yesterday afternoon to the park near out house. We ride up and there are two girls standing there, one is holding the cutest Yorkie! They then proceed toward us and ask, “We found this dog, is it your’s?” My immediate response had to be held back so that I did not come home with a new dog. The girls tell us they are about to call the vet clinic that is listed on the dog’s vaccination tag. They get “Sadie’s” home phone number and the man that answers says they will be right over and that he can’t believe she got all the way over to the park we are at. 5 minutes later a car pulls up and a man and his 2 daughters get out. These girls are probably 5 and 3 years old…and they are adorable…I am so glad that I did not take their dog! So, they run up yelling the dog’s name and the girls hand her over when this occurs… the youngest of the owners yells (in her tiny 3 year old voice) “Sadie ran away! Sadie is my doggie! She lives with me!” Yes….we got chewed out by a child for giving her dog back…

Anyway, I’m very glad Sadie got back to her real owners, no matter how sad I am that I did not end up with a new, precious dog! One of these days…

Today was actually a pretty good day even though it was the first day back from Spring Break. Here are a few things from the end of my break and since I’ve gotten back:

I walked into the kitchen on the last day of Spring Break to this platter of veggies that my mom made for me. I’m weird and she knows me.

She also bought me some of my favorite Girl Scout Cookies, Samoas!

And it’s that time…Easter! Meaning wonderful things including my favorite candy is available…SweeTarts…I know, they’re around all year, but not the Chicks, Ducks, and Bunnies!

Sydney made me a fantastic new headband! You can order one at the Alabaster Jar. Yes, I just plugged that, but she makes some fantastic accessories and I knew you would want one!

it’s been awhile

Well, hello all! It’s been a rather hectic spring break and much, much too quick. I have a few things to post, I know it’s long, but the story at the end makes it all worth reading.

1. I bought green nail polish not even thinking about St. Patrick’s Day, but I was covered when the time came. It’s from Target, the brand is Sinful Colors and the name is Show Me the Way; I think it’s a fantastic new addition to my polish collection:

2. I made Sassy Turkey burgers, they were pretty good for my first try at using ground turkey. The recipe uses ground pork to add a little fat and flavor but not being a huge pork fan I decided I’ll need to find something else…maybe the standard egg to hold it together and some chopped green chilis might work well. I would still recommend trying a turkey burger recipe if you haven’t already.

3. I baked these Chocolate Puddle Cookies from the blog 101 Cookbooks, which I love looking through. The recipes are really natural, and many are too natural for me, but they’re inspirational none the less! The cookies are fantastic, they’re a little like brownies, slightly chewy and flakey on the outside. She notes in the recipe that they spread, but they really, really spread…probably where the puddle part comes from.

4. Bad part of my break: Car broke down and was in the shop for a water pump replacement for a couple of days. And I went to the dentist, who sent me to an Endodontist, who performed a cold test on my tooth and I will be having a root canal done on Good Friday, which is super. Finding out that it is snowing in Stillwater wasn’t so fantastic either.

5. I should have started out with this story, but trust me keep reading…I think it’s worth it. I went to the most back-woods, redneck memorial service EVER. It was a very nice service and I’m incredibly sorry if you’re from southeastern Oklahoma, but my family is too, so I can make comments. If you recall the banjo music from Deliverance (skip to 2:15, if you watch this), that’s what was playing in my head the whole time. We made it up to Tishomingo and over to Hopewell (yeah, googlemap that, if you hit Wapanucka, you went too far) and turn onto a dirt, not gravel, dirt road that had a sign pointing us in the direction of the church….9 miles away. Longest 9 miles of my life, I believe it took at least 35 minutes, if not longer. On the way there we encountered a burial plot…in someone’s front yard. This, thankfully was not my family, but literally there was a real headstone surrounded by 4 pipe and cable fence gates wired together to make a barrier, a cow was standing guard 6 feet away from Mama, or whoever was laid to rest there. Here’s a picture of a shack that we think someone still lives in. This is across the road from the man that sits on his front porch and shoots at cars, no joke, and unfortunately I wasn’t able to get a picture of him.

6. Overall it’s been a great break though! I tried several different recipes, a few I’ll share later, and I got to see Jim and the family! It’s over too soon, but was a really nice break!

I love food…I do, love eating it and love finding recipes and trying new foods, no big surprise really since that’s what I’ve studied for 4 years in college. I’ve discovered some foods and recipes lately that I have enjoyed and will be trying and I’m going to share them with you!

Joseph’s Flax, Oat Bran & Whole Wheat Pitas:

60 cal, 4 g fiber, 2 g fat (omega 3 fat, which is the good kind)…

generally a superior sandwich choice!

I didn’t know how these would be, but they’re great! I can change up the monotony of my usual turkey sandwich. I pack mine with: turkey, chipotle cheddar cheese, fresh spinach, green bell pepper, and a little light zesty Italian Kraft dressing. mmmm…

Use these pitas for the usual sandwich substitute or something different like a individual pizza crust, quesadillas, and I think I’ll use them when I try the turkey burger recipe I found.

I’m also going to share this fantastic black bean salsa recipe that I dug up from Food Prep lab.

15 oz. can black beans, drained

15 oz. can corn, drained

4 oz. can green chilies

1/4 c chopped purple onion

1/4 c chopped red bell pepper

1/2 c chopped cilantro

1 clove fresh garlic minced

1/3 c olive oil

1/3 c fresh lime juice

1/4 c roasted chipotle Tabasco

1/8 tsp black pepper

1/4 tsp salt

Mix everything together in a large bowl, chill, and serve alone as a cold salad or with chips as a salsa!

As most of you know by know OSU held a grand unveiling of the latest fundraising plan in the Student union on Friday. Well, that’s nothing compared to what’s going on today! What could be more exciting than fundraising 1 billion dollars? Well, a Mariachi Band, of course!

I enjoyed the 5 minutes of tunes immensely and would definitely have stayed for more if not for class. Thank you, Hispanic Student Association for brightening my day!

here we go

Well, here it is!

I’ve officially given in and started one of these things. We’ll just see how it goes, I’m not much of a writer/ journal user so this will be interesting. Hopefully I’ll keep my posts short and sweet to keep you interested and reading!

For now I’m going to start with something I found quite hilarious going on within the Winter Olympics. Yes, the Canadian women’s hockey team beat the US team… apparently we have been rivals for the past couple of years, who knew? Well, as unfortunate as a loss is, at least our girls didn’t acquire a yahoo homepage story entitled “Canada’s Hockey Team in Hot Water,” now really what could have been so bad? Let me entice you to read the story and scroll through the pictures with this nice little shot…
